The green hills of Western Wisconsin's Coulee Country lend themselves beautifully to the production of grass fed and finished beef, lamb, and pastured poultry. Nordic Hills Farm is a family operation run by James and Mary Olsen, of Ontario, WI.
Our pastures have been chemical free for decades. We produce no row crops, which keeps machinery usage to a minimum and our carbon footprint miniscule. Grass is our crop, and our animals, having enjoyed a healthy start on their mama's milk, are our harvesters.
No grain is ever fed to our beef and lambs, thus the Omega 6 fatty acids in the meat are held in a healthy balance. A grass diet increases the production of Omega 3's, CLA's and essential vitamins found wanting in grain fed ruminants.
There is a relatively newly discovered, very important benefit to eating grass fed meats and eggs: these are some of the very few foods that provide Vitamin K-2 in the diet. Most of us are aware that leafy greens, such as kale and spinach, are rich in Vitamin K-1. When cattle, sheep and chickens eat grasses and greens, the Vitamin k-1 found in the green stuff in their diet is converted to K-2 in their meat and egg yolks. K-2, together with Vitamin D, performs a crucial function in our bodies: it guides the calcium we ingest to the proper locations- to the bones and teeth, and away from the soft tissue, such as blood vessels and heart valves. Keeping the circulatory system free of deposits of plaque and calcium is an essential component to preventing heart attacks.
The animals of Nordic Hills Farm receive no artificial growth stimulants nor antibiotics. *While it is true that we have not chosen to seek official organic certification, the meat produced from our animals is 100% all natural organic.
